INGREDIENTS
- 2 medium (approx 2-3/4" long, 2-1/2" dia) Sweet Red Peppers
- 2 oz Feta Cheese
- 8 oz Cherry Tomatoes
- 0.5 tsp ground Thyme (Dried)
- 2 tbsps Basil
- 1 tbsp Extra Virgin Olive Oil
DIRECTIONS
- Preheat oven to 400°F.
- Cut peppers in half lengthwise. Remove stems, ribs and seeds.
- Gently combine feta, tomatoes, thyme and basil. Fill pepper halves with the mixture.
- Place in a baking dish and drizzle with olive oil.
- Bake, covered with aluminum foil, for 30 minutes. Remove foil and bake an additional 15 minutes until the tomatoes burst and cheese is golden-brown.
